No Knead Raspberry Breakfast Bread

A deliciously fruity, warm bread – ideal for a weekend breakfast in bed on a cold, crisp morning. Stuffed with goodness from wholewheat flour, oats, and seeds, it will keep you going all morning long. 

So we’ve just got back from the most amazing holiday in Australia. It is definitely fair to say that we’re having a big case of the holiday blues… Coming from a wonderfully pleasant 30 degrees, blue skies and sunshine, the endless grey and drizzle back home has certainly been a bit of a shock to the senses! That being said, the trees have exploded with colour all around us whilst we’ve been away, and the leaves on the floor are just begging to be kicked around in childish delight. There are definitely upsides to an autumn at home.

Another upside to this part of autumn is that we are in full on autumn/winter food mode. Think stews, casseroles, roast lunches, pies…. the list goes on. I think this bread fits into this category perfectly; warming and cosy, but cheery. This bread just screams to be eaten in bed – or at least pyjamas. It’s made for a lazy morning, perhaps pouring over the papers in bed with a coffee on a day when there’s no where to be. That’s my kind of weekend day!

I’ve used raspberries as per the original recipe – they also happen to be my favourite fruit, so I’ll use them every chance I get – but you could use any kind of berries. I think mixed frozen berries would work particularly well, and they are a lot cheaper than fresh which is always a bonus!

I’ve also included a super simple recipe for Honey Butter (think just honey… and butter). Of course you could just spread a little dairy free butter on, but it works brilliantly with the honey and it adds a little touch of luxuriousness . I think it needs a bit of sweetness to combat the wholewheat flour and seeds savoury flavours, and it really helps emphasise the raspberries.

Dairy Free Brownies

Sweet, chocolatey, dangerously indulgent chocolate brownies. Simple and quick to make, they are the perfect dessert or sweet treat. Another seemingly impossible dairy free bake!

Oh brownies. Oh sweet chocolatey brownies. Sweet sweet fudge-y, gooey brownies… they’re just the perfect treat no one can resist! I can’t put into words how much I love this recipe, and keep thinking to myself how funny it is that it has taken me this long to put it on the blog! It’s a recipe I make really often (we’re talking at least twice a month!) and it’s just perfect.

These brownies make a fabulous low effort dessert (I love to drizzle a little chocolate sauce on top with a scoop of dairy free ice cream on the side), or when baked for a few minutes longer they come out as the best cold brownies you will ever have eaten. Still moist and fudge-y like a brownie should be, also like the most indulgent chocolate cake.

I remember bringing these brownies into work once, and two amazing things happened; they disappeared like lightning, and no one could genuinely believe they were dairy free. One of my biggest fears of giving up dairy was giving up chocolate. And, probably very unsurprisingly, whenever I tell people that I’m allergic to milk, they also think this must mean a life without chocolate…. Wrong!

In come the heroes of this story…. dark chocolate and cocoa powder. Most dark chocolate is made without milk, so by adapting a recipe ever so slightly, you can still get that wonderfully creamy, sweet chocolate taste – just without the milk! Cocoa powder, the other saviour, is rather the same story – always be careful and check the label, but usually it doesn’t contain any milk. Cocoa powder is different from hot chocolate powder (which often does contain milk, and a very high amount of sugar), and being pure cocoa, a small amount goes a long way to provide a chocolate kick.

This recipe is my go to standard – a recipe from my Boyfriend’s mum, Sue – and it’s so good, so reliable, that it would feel like cheating to even peek at another recipe. It’s also very quick, and you can make them as fussy or simple as you like. I’ve added hazelnuts and dried cranberries as these are some of my favourite things to add to a chocolate recipe (see my Rocky Road recipe to see what I mean!) but they really are perfect without them, just dusted with icing sugar.

Simple 5 Ingredient Fruit Tart

A quick and simple 5 ingredient fruit tart – Flakey puff pastry topped with jam and fresh fruit, served with ice cream. Perfect if you’re in a hurry!

Catering for anyone with an allergy is hard; I know a lot of my friends over the years have worried about how and what they will cook for me, and one meal still seems to flummox the best of them – dessert! So far the desserts on my blog have catered more towards someone who has had to give up dairy – to show them the impossible is possible – however not everyone has the time or inclination to make them. Sometimes you just want a quick and simple dessert whether it’s to make for yourself or for someone else.

And so it is this dilemma that has inspired this post; here I present a simple 5 ingredient dessert, which only features 1 dairy free ingredient! How have I done this, I hear you say? Well, with one of my shop-bought-dairy-free-life-savers – pre-made puff pastry. I remember the first time I realised that most pre-made puff pastry didn’t actually have any milk in it… it was like a world of possibilities opened up in front of me. Along with the pastry, the other ingredients are jam, fruit, sugar and dairy-free ice cream.

The ingredient list might seem a bit vague but this is the beauty of it – so simple, and so versatile. The hardest thing you need to do is work out which fruit and jam combination you want to use! The flavour combinations really are endless; Pear & raspberry, apricot & rhubarb, apple & berries, peaches & orange marmalade, even banana and dairy-free chocolate spread would work!

So next time you need to bake a dairy free dessert for someone and get stuck, remember the puff pastry magic and get creative!
