Orange Polenta Cake

A delicious, no-comprise allergy friendly bake free from dairy, gluten and wheat. This different texture cake is made with polenta and ground almonds, which really does make an impressive replacement to wheat flour, with the added benefit of tones of flavour. Full of orange zest and topped with crushed pistachios, this is a wonderful light cake perfect for the welcoming the warmer weather.

So, custard season is over! I hear a bit of a sigh of relief all around 🙂 This week, we’re onto something far less risky, although something people will equally question. This is a fantastic, very different, cake recipe, that just happens to be dairy, gluten and wheat free. The texture is incredible; slightly crunchy from the polenta, lighter than you would expect given that it is full of ground almonds, and of course it is packed full of zesty orange flavour.

This cake would be perfect served for afternoon tea or as a dessert (tell you the truth… we ate it for both!). If I’m honest, I would really have liked a little dollop of creme fresh on the side… but ok… you can’t have everything! If you are not dairy free though, I really would give that a try – it complements both the flavour and the texture perfectly. If you are dairy free, do like me and have a small scoop of ice cream. Sounds weird, but trust me it works.

I also thought this cake was perfect for this season, for some reason it made me feel so summery – perhaps because of all the pretty bright colours on top – but also the zesty orange hit really made me feel like I was on holiday.

This cake is incredibly simple to make; pretty much a one bowl mix, pour and bake recipe. I’ve added some chopped pistachios and extra zest on top – it is definitely worth the extra minute of effort. The pistachios are a lovely little pop of nutty sweetness and cut through some of the zest-iness of the cake flavour.

Chocolate Orange Shortbread Biscuits

Deliciously like a Terry’s Chocolate Orange in biscuit form, these sweet but zesty shortbreads work for just about any occasion. Chocolatey and packed with orange zest whilst being simple to bake, these biscuits will appeal to everyone and can be made in just a few minutes with store cupboard ingredients.

Of all my bakes so far for this blog, these have to be one of my favourites. I just can’t resist the combination of orange and chocolate – it brings back so many childhood memories of waiting on Christmas day to find that Terry’s Chocolate Orange in your stocking from Father Christmas. Chocolate Oranges (along with Twixes) are still, to this day, one of the few foods I wistfully look at, thinking about how bad would it be if I ate a piece….

As well as hitting that chocolate orange sweet spot, these shortbreads are also really simple to bake. Relying on almost all store cupboard ingredients, it makes them dangerously easy to make at anytime. For all their simplicity, the finishing touch of melted, drizzled chocolate seems to turn them from a simple concept to an almost premium looking biscuit. In the right packaging these could certainly pass for a Marks and Spencer’s biscuit.

The other great thing about these is that there is always time for a biscuit. AM or PM, it just can’t go wrong – on your own, or with your family round, there’s always a good reason to eat a biscuit. So although these keep extremely well for a few days, it really is quite unlikely you will have any left…

Iced Orange Biscuits – Perfect for Easter

Crisp, melt in your mouth shortbread biscuits flavoured with orange zest – simple enough to bake with children, tasty enough that you won’t want to share!

These simple but delicious shortbread biscuits are perfect for Easter and would make an ideal baking project to do with children; Baking these brought back so many memories of baking with my mum when I was a child. These biscuits are deliciously buttery (although, of course, they are not made with real butter!), crisp, yet they melt in the mouth like a good shortbread should.

To get into the Easter spirit I used a mixture of baby chick, rabbit and egg shaped cutters and then simply piped icing all around the edge of each biscuit. Flavoured with orange zest and vanilla they suit all tastes, so make sure to hide some for yourself before they all disappear! You can of course use any zest you like or even add some extras like raisins or chocolate chips like I have in my egg shaped biscuits.
