Chocolate Hazelnut Ice Cream

A smooth, sweet and rich chocolate ice cream, designed to kill those Ben and Jerry’s cravings. With hazelnut chunks throughout, and a simple make at home recipe, you’ll be wondering why you’ve not tried to make your own ice cream before!

Last summer I was lucky enough to be asked to hold on to my Mum’s ice cream machine whilst she packed up her house, preparing to go and teach abroad for a while. I could not have been more excited! Homemade ice cream is just the best; if you’ve never tried it, the best way I could explain it is like this – imagine unlimited flavour options, in a sweet, thick, creamy gelato style ice cream.

Then, really soon after came the Bake Off episode all about ‘free from’ baking. I was so excited! They were making a dairy free Artic Roll, and I began thinking of all of the different flavour combinations they could do… and to be honest, I felt slightly disappointed that almost all of them used coconut milk, and one of the biggest ‘challenges’ they had was trying to cover up the coconut flavour!

In this ice cream, we’re using hazelnut milk to full effect; it perfectly compliments the rich chocolate, and we’re adding some chopped hazelnuts for crunch. The end result is perfect – as smooth and creamy as a real Ben & Jerry’s ice cream, and as rich, chocolatey and sweet too. We cheat slightly by strictly making a frozen custard; full dairy ice cream is made by adding whipped cream to a custard, but in the interest of getting a thick, rich, and smooth ice cream at the end, we’re simply going to just churn it as it is.

The ice cream can be made either with or without an ice cream machine. I would definitely advise you all to go out and buy a cheap (£20!) machine, where you freeze the container, then pour in the custard, and turn on the motor. However, if I can’t convince you to do that, then you can make this the old fashioned way, stirring the ice cream vigorously every hour for 3 hours as it freezes up. The results are still good, but you will get more ice crystals then you would in a machine.

Now I’m just waiting for summer; think strawberry and honeycomb, or eton mess ice cream…At least summers not too far away now!

Vegan Coconut and Blueberry ‘Cheesecake’

A vegan dessert that has convinced even me it is possible to replace cheesecake. Although not cheese-y in the slightest, this is a soft, creamy and fruity dessert sure to fill that cheesecake gap in your life!

OK… Let’s be honest…It can’t really be a cheesecake without cheese. So I’ve named it ‘cheesecake’ as I just couldn’t think of a more apt name for this creamy, fruity, delightful dessert. The filling is soft and light, which surprisingly comes from cashew nuts, coconut milk and coconut oil. Sometimes I think coconut can be an over-used flavour in dairy-free baking, however I loved it paired with blueberries. It is certainly a favour combination I would like to try with other things – pancakes or french toast perhaps?!

One thing that really attracted me to this recipe was that it used what I would call proper ingredients – sometimes I find that dairy-free and vegan recipes can have all sorts of weird ingredients in them and you have no idea what they are or where to buy them from. The creaminess in this ‘cheesecake’ comes from cashew nuts and coconut milk; together, when blended, they produce the most delightful, soft and creamy textured thick paste (sounds delightful, I know, but bear with me), which when chilled has almost the same texture as cream cheese. And because cashew nuts have such a gentle flavour, it leaves room for the coconut and blueberries to stand out.

The other thing I have to admit is that I cheated slightly for the aesthetics of the dessert. This is very unlike me, but I have to admit I added a few drops of purple food colouring into the mix. Perhaps we have different varieties of blueberries here; whereas the blueberries from the original recipe turned the ‘cheesecake’ a brilliant hue of violet, mine turned it a distinct shade of grey… So I cheated and added a tiny bit of food colouring. Let’s be honest – it’s hardly the worst crime in the world and aesthetics of a dessert are important!

As someone who has not eaten a real cheesecake for a very long time, this ‘cheesecake’ was delicious. It really hit the spot for a sweet creamy dessert, and the buttery biscuit base reminded me of the childhood cheesecakes my mum used to make. The dessert was also surprisingly easy and didn’t require baking. Really, apart from melting butter, this was more of an assembly job! The base is frozen, and, once chilled, the blended mixture is poured on top, and then the ‘cheesecake’ is frozen. Thawed thoroughly before eating, it looses any frozen texture and tastes deliciously like a chilled dessert. It may not be a real cheesecake, but it certainly came close!

Quick Strawberry Frozen Yoghurt

Smooth, gelato-like Strawberry Frozen Yoghurt. An ideal dessert which can be thrown together in minutes, with only four ingredients!

One thing I really miss being dairy free is a wide choice of ice creams. Wide choice, reasonably priced and readily available ice creams! Although there are some excellent dairy free ice cream alternatives available, they tend to be fairly expensive and not available everywhere. And sometimes vanilla ice cream just doesn’t cut it! However, I found a great recipe in Jamie Oliver’s 30 Minute Meals cook book, where he makes a sort of instant ice cream using frozen blueberries, yoghurt and honey – and this is the inspiration for this recipe. A very simple frozen dessert using readily available ingredients.

I’ve used strawberries as they are in season at the moment, and if you, like us, buy them when they’re on offer, you might occasionally find yourself with a few too many! The best thing about this recipe is that it is actually best when the strawberries are getting to almost past their best – this is when they are sweetest and have the most intense strawberry flavour. So if you ever find yourself with some strawberries that are turning, and you’re not going to eat them right away – freeze them! Although freezing berries can often ruin their texture, it is a great trick for keeping seasonal fruit for recipes where the texture is not important, and this recipe is a perfect example.

This recipe is seriously quick – I had to laugh writing the recipe realising there are only 3 steps. And one of them is serve and eat! The only key thing you need is a good blender as it does take some serious power to whizz the frozen fruit smooth. One thing you can do to help with this is cut your strawberries up smaller – at least into quarters. Don’t go mad though and cut them too small as you might then loose a lot of the tasty strawberry juices.
